Whisk gelatine into boiling water in a small heatproof bowl until completely dissolved, then cool slightly.

Beat the softened cream cheese, caster sugar, and lime zest together until completely smooth and creamy.

Gradually beat in the lime juice, half of the mango puree, and the warm gelatine mixture.

In a separate bowl, whip the chilled thickened cream until soft peaks form.

Gently fold the whipped cream into the cream cheese mixture until evenly combined.
