Place the diced potatoes into a large saucepan and cover with cold, salted water.

Bring to the boil over high heat and cook for 12 to 14 minutes until just knife-tender.

Boil the eggs in a separate saucepan for 8 minutes, cool in ice water, and peel.

Drain the cooked potatoes in a colander and allow them to steam dry until barely warm.

Whisk the mayonnaise, sour cream, Dijon mustard, vinegar, salt, and pepper in a large bowl.

Coarsely chop the peeled hard-boiled eggs into chunks.

Add the warm potatoes, chopped eggs, spring onions, and celery to the dressing.

Scatter in the fresh parsley and dill.

Chef's tips
