Dissolve the jelly crystals in boiling water inside a heatproof jug, then stir in the cold water.

Pour the jelly liquid into a shallow container and chill for three hours until set.

Cut the set jelly and sponge cake into three-centimetre cubes.

Arrange half of the sponge cubes in an even layer across the base of your glass bowl.

Drizzle half of the sweet sherry evenly over the sponge layer.

Scatter half of the jelly cubes, diced mango, and passionfruit pulp over the sponge.

Pour half of the chilled vanilla custard smoothly over the fruit layer.

Repeat the layers using the remaining sponge, sherry, jelly, mango, passionfruit, and custard.

Beat the thickened cream and icing sugar in a mixing bowl until soft peaks form.

Spoon the whipped cream over the custard layer and smooth lightly.

Decorate the top with reserved fresh mango slices, extra passionfruit pulp, and toasted flaked coconut.

Chef's tips
Assemble the trifle at least four to six hours ahead so the sponge absorbs the juices and sherry without turning mushy. Kensington Pride or Calypso mangoes offer the best fragrance and firm texture for layering. Keep the bowl well-chilled in the fridge right up until serving time.
