Instructions

    Place the whole oranges in a saucepan and cover completely with cold water.

    Bring to the boil, then simmer gently for 1 hour until soft when pierced.

    Drain the oranges and let them cool completely to room temperature.

    Preheat your oven to 160 degrees C fan-forced.

    Grease and line the base and sides of a 22 cm springform tin with baking paper.

    Cut the cooled oranges into quarters and remove any seeds you find.

    Process the whole oranges, skin and all, in a food processor until very smooth.

    Add the eggs, caster sugar, and vanilla to the processor bowl.

    Blend on high for 1 minute until the mixture looks pale and frothy.

    Add the almond meal and baking powder, pulsing briefly until just combined.

    Pour batter into the tin and scatter flaked almonds evenly over the surface.

    Bake for 55 to 60 minutes until golden brown and a skewer comes out clean.

Boil the oranges well in advance so they have plenty of time to cool before blending. If the top begins to brown too quickly in the oven, loosely cover the tin with foil for the final 15 minutes of baking.
