Layer the berries with the sugar and leave 4 hours or overnight.

Heat slowly in a wide pan with the lemon juice until the sugar dissolves completely.

Boil hard, skimming, to 105C.

Check the set on a chilled saucer.

Stir in the butter and rest 5 minutes.

Pot into hot sterilised jars and seal.

Work in batches of no more than 1.5 kg of fruit; bigger pots boil too slowly and darken.
