Instructions

    Fry the pork belly in the pot until the fat renders and the edges brown.

    Add the kimchi and garlic and stir-fry 5 minutes until the kimchi darkens.

    Stir in the gochugaru and gochujang and cook 1 minute.

    Pour in the water and any kimchi juice and bring to the boil.

    Simmer 20 minutes, then lay the tofu and onion on top and cook 8 minutes more.

    Scatter spring onion and serve bubbling with rice.
