Instructions

Soften the onion in the butter without colouring.

Add the potatoes and just enough water to cover and simmer until nearly tender.

Stir in the corn and cook 3 minutes.

Add the milk and cream and bring to a bare simmer.

Slip in the salmon and poach 5-6 minutes until it flakes.

Season, add the dill and rest 5 minutes before serving.

Add the salmon last and let residual heat finish it; boiled salmon goes chalky.
