Instructions

    Parboil the bones for 15 minutes, drain and rinse them and the pot thoroughly.

    Cover with fresh water, add the charred onion and ginger, brisket and spices and bring to a bare simmer.

    Skim carefully and simmer uncovered for 5-6 hours, never letting it boil.

    Remove the brisket after 90 minutes, cool and slice it thinly.

    Strain the broth and season with fish sauce, salt and a little sugar.

    Soak and cook the noodles, divide into bowls with raw sirloin and brisket, and pour the boiling broth over; serve with herbs, sprouts and lime.
