Instructions

    Cut the peeled potatoes into thick, chunky chips around 1.5cm wide.

    Whisk together plain flour, cornflour, baking powder, paprika, turmeric, garlic powder, and salt in a bowl.

    Pour in cold sparkling water and orange food colouring, whisking briefly until a smooth, thick batter forms.

    Heat the vegetable oil in a deep pan or deep-fat fryer to 180ยฐC.

    Working in batches, dip the cooled chips into the batter to coat thoroughly.

    Carefully lower the battered chips into the hot oil, frying for 4 to 5 minutes until crisp and bright orange.

    Lift out with a slotted spoon onto kitchen paper to drain excess oil.

    Sprinkle immediately with sea salt and malt vinegar while piping hot, then serve straight away.
