Heat ghee (clarified butter) in a heavy pan. Add the gram flour.

Roast on low heat, stirring continuously for about 25 minutes. Stop when it turns golden and smells nutty.

Stir and sprinkle in the milk. This creates a rich, slightly grainy texture.

Keep roasting for another 5 minutes. The mixture should become evenly golden all over.

Dissolve sugar in a little water over heat. Cook until thick enough that a drop stretches into a single thread between your fingers.

Take the roasted gram flour off the heat. Stir in the sugar syrup and cardamom powder.

Pour the mixture into a greased square tray. Spread it out evenly.

Top with silver leaf and chopped pistachios. Let it set for 2 hours before cutting into squares.
