Instructions

Heat the oven to 190°C (170°C fan).

Melt the butter in a frying pan over medium heat on the hob.

Add the bacon and fry for 5 minutes until lightly browned.

Stir in the sliced leeks and fry gently for 10 minutes until soft and sweet.

Spoon the leek and bacon mixture into the pie dish and leave to cool slightly.

Whisk two eggs, clotted cream, nutmeg, salt, and pepper in a bowl until smooth.

Pour the cream and egg custard evenly over the leek and bacon filling.

Roll out the pastry on a lightly floured surface to a 4 mm thickness.

Drape the pastry over the pie dish and crimp (fold and pinch the pastry edge into a rope) along the rim.

Cut a small steam vent in the centre and brush the pastry lid with beaten egg.

Bake for 35 to 40 minutes until the crust is deep golden and the filling is set.

Wash sliced leeks in cold water to ensure no soil remains trapped in the layers. Allow the cooked leeks to cool for a few minutes before adding the cream mixture so the eggs do not scramble prematurely.
