Instructions

  1. 1

Heat your fan oven to 160°C (180°C conventional) and grease a 20cm round cake tin with butter.

  3. 3

Sift the self-raising flour, baking powder, and ground cinnamon into a large mixing bowl.

  4. 4

Rub in the diced chilled butter using your fingertips until the mixture looks like fine breadcrumbs.

  5. 5

Stir through the golden caster sugar and the diced cooking apples.

  6. 6

Add the beaten eggs and milk, then fold gently until a thick, uniform batter forms.

  7. 7

Spoon the batter into the prepared tin and smooth the top evenly with a spatula.

  8. 8

Arrange the sliced eating apple over the top and scatter with demerara sugar.

  9. 9

Bake for 45 to 50 minutes until golden brown and a skewer comes out clean.

  10. 10

Leave to cool in the tin for 15 minutes, then transfer to a wire cooling rack.

Chef's tips

Use tart Bramley apples for the batter as they break down into a wonderfully moist texture. Do not overmix the batter once adding the eggs to keep the sponge light and tender.

Ingredient substitutions

  • Devon clotted creamthick double cream or warm custard
  • Bramley cooking applesGranny Smith apples
  • golden caster sugarwhite caster sugar or light brown soft sugar

Storage

Store in an airtight tin at room temperature for up to three days.

Reheating

Warm individual slices in a preheated oven at 150°C for 5 to 7 minutes before serving.

Common mistakes to avoid

  • Chopping the apples too coarsely, which can cause the cake to crumble when sliced.
  • Opening the oven door too early, which may cause the centre of the sponge to sink.
