Strain the shucked oysters through a fine sieve into a bowl, reserving all the liquor.

Melt the butter in a heavy-based saucepan set over a low heat on the hob.

Add the diced shallots and celery to the melted butter.

Gradually whisk in the warm milk and reserved oyster liquor until completely smooth.
