Instructions

    Place two small saucers into the freezer to chill for testing the jam set later.

    Toss the chopped rhubarb, granulated sugar, fresh ginger, stem ginger, ginger syrup, lemon juice, lemon zest, and ground ginger into a preserving pan.

    Leave the mixture to stand for two hours at room temperature until the sugar draws out plenty of pink rhubarb juice.

    Set the pan over low heat on the hob, stirring gently until all remaining sugar granules have completely dissolved.

    Raise the heat to high and bring the pan to a vigorous, rolling boil.

    Boil hard for 10 to 15 minutes, stirring frequently along the bottom of the pan to prevent catching.

    Remove the pan from the heat and spoon a little hot jam onto a cold saucer.

    Wait one minute, then gently push the jam with your fingertip to check if a crinkled skin forms.

    Return to the boil for another three minutes if the jam runs freely, then test again on the second chilled saucer.

    Stir in the butter to melt away any frothy white scum sitting on top of the jam.

    Leave the hot jam to settle in the pan for ten minutes so the ginger pieces distribute evenly.

    Ladle the warm preserve into hot, sterilised glass jars, seal tightly with lids, and allow to cool completely.

Chef's tips

Macerating the rhubarb with the sugar before cooking draws out juices naturally and helps the fruit chunks keep their tender shape. If you prefer a firmer set, you can use jam sugar with added pectin, though traditional Hebridean rhubarb jam is delightfully soft and spreadable.
