Mix the semolina flour, olive oil, white wine, and water in a bowl until a shaggy dough forms.

Knead the dough on a lightly floured surface for 5 minutes until smooth and pliable.

Wrap the dough tightly in cling film and rest at room temperature for 30 minutes.

Pass the drained ricotta through a fine sieve into a clean bowl.

Stir the caster sugar, chocolate, cinnamon, and lemon zest into the sieved ricotta.

Roll the rested dough out thinly to a thickness of roughly 2 mm.

Cut the rolled dough into 10 cm circles using a round cutter.

Place a generous tablespoon of ricotta filling onto the centre of each circle.
