    Whisk the 4 egg yolks with 200 g caster sugar until thick and pale.

    Pour in the melted butter and grated lemon zest, stirring until combined.

    Add the Alchermes liqueur and mix until the batter turns bright crimson throughout.

    Fold in the sifted flour and baking powder to form a thick, smooth dough.

    Transfer the mixture into the tin and level the surface evenly.

    Bake for 35 minutes until a skewer inserted into the centre comes out clean.

    Whisk the 3 egg whites with 100 g sugar until stiff, glossy peaks form.

    Remove the cake, unmould carefully, and spread the meringue over the top and sides.

    Scatter the multicoloured sprinkles generously over the glossy meringue.

    Return to the oven at 110 degrees C for 15 minutes until dry and set.
