Drain and rinse the soaked Sarconi beans thoroughly under cold water.

Place the beans in a saucepan, cover with water by 5 cm and add one bay leaf.

Simmer gently over low heat for 45 minutes until the beans are tender but intact.

Drain the cooked beans, reserving 250 ml of the starchy cooking water.

Warm the olive oil in a wide heavy-based pot over medium heat.

Add the crushed garlic cloves and cook for 1 minute until fragrant and lightly golden.

Add the crushed plum tomatoes, second bay leaf and a pinch of salt to the pan.

Simmer the tomato sauce over medium-low heat for 10 minutes until slightly thickened.

Stir the cooked beans and 150 ml of the reserved cooking water into the sauce.

Simmer gently for 15 minutes, stirring occasionally, until the sauce is rich and glossy.
