Instructions

    Rinse the prepared fish and squid thoroughly under cold running water.

    Pat every piece completely dry using kitchen paper to prevent oil splattering.

    Combine the durum wheat semolina and plain flour in a wide, shallow tray.

    Pour the peanut oil into a deep pan and heat to 180ยฐC.

    Dredge the squid rings lightly in the flour mixture, shaking off excess in a sieve.

    Lower the squid carefully into the oil and fry for 2 minutes until crisp and pale golden.

    Lift out with a spider skimmer and drain immediately on kitchen paper.

    Dredge the small fish in batches, shaking away excess flour thoroughly.

    Fry each batch for 3 to 4 minutes until golden and crisp throughout.

    Drain on fresh paper and season with fine sea salt whilst piping hot.
