Whisk the buckwheat flour, plain flour, and fine sea salt together in a large mixing bowl.

Pour in the grappa and ice-cold sparkling water gradually, whisking into a thick, smooth, lump-free batter.

Cover the batter and let it rest in the refrigerator for 30 minutes.

Cut the trimmed Casera cheese into neat 1.5 cm cubes.

Heat the frying oil in a deep heavy pan to 175 degrees C.

Toss a few cheese cubes into the batter so they are completely coated.

Scoop out each cheese cube with a tablespoon of batter and drop it gently into the hot oil.

Keep the sparkling water icy cold to create a light, crisp batter upon hitting the hot oil. Coat the cheese completely in batter before dropping into the oil to prevent molten cheese from leaking out. Fry in small batches so the oil temperature does not drop.

Storage
