Grease a 22 cm springform tin with butter and dust lightly with flour.

Beat the softened butter and icing sugar with an electric mixer for 10 minutes until pale, light and fluffy.

Add the whole eggs and egg yolks one by one, beating thoroughly after each addition until fully incorporated.

Fold in the grated lemon zest, vanilla bean paste and fine salt.

Sift together the plain flour, potato starch and baking powder into a separate bowl.

Gently fold the dry ingredients into the butter mixture with a spatula until just combined.

Transfer the batter to the prepared tin and level the top gently with a spatula.

Bake for 35 to 40 minutes until golden and a skewer inserted in the centre comes out clean.

Cool in the tin for 15 minutes, then release and cool completely on a wire rack.
