Preheat the oven to 175C (155C fan) and grease a 22cm springform cake tin with butter.

Line the base of the tin with non-stick baking parchment.

Place the well-drained ricotta and caster sugar into a large mixing bowl.

Beat the ricotta and sugar with a whisk until smooth and creamy.

Add the eggs one at a time, whisking thoroughly after each addition.

Grate in the lemon zest and pour in the strained lemon juice.

Sift the flour, baking powder and salt into the bowl.

Fold the dry ingredients into the ricotta mixture gently with a spatula until just combined.
