    Bring the beef broth to a rolling boil in a medium saucepan, then reduce heat to keep it piping hot.

    Place one hot fried bread slice in the centre of each warmed heatproof soup bowl.

    Carefully crack one egg directly onto the middle of each piece of fried bread, keeping the yolk whole.

    Scatter the grated Grana Padano generously over the egg white and bread, leaving the yolk visible.

    Ladle the boiling broth gently down the side of each bowl so it does not burst the yolk.

    Let the soup stand for two minutes so the boiling broth lightly poaches the egg white.

    Season with freshly cracked black pepper and serve immediately while steaming hot.
