Instructions

Whisk the gram flour, rice flour, turmeric, nigella seeds, salt and water together. Make a thick batter that coats well.

Stir a pinch of baking soda into the batter for extra crispness, if using.

Heat mustard oil in a kadai (deep curved pan) until shimmering hot.

Dip the brinjal rounds in batter. Fry until golden and crisp on both sides, then drain on paper.

Mix the sliced onion, chopped green chilli and a spoon of batter. Drop spoonfuls into hot oil to make peyaji (onion fritters).

Fry the onion fritters until deep golden and crisp, turning occasionally. Drain them well.

Coat the sliced potato rounds in batter in the same way. Fry until golden and crisp.

Serve all the hot fritters together with green chillies and a cup of tea.
Chef's tips
Keep the oil at a steady medium-high heat. If it is too hot, fritters brown before cooking through, and if too cool, they turn greasy. Serve immediately.

Best eaten fresh within an hour of frying.
