Instructions

    Melt the beef dripping in a large casserole dish set over medium-high heat on the hob.

    Add the diced beef and lamb in batches and fry until well browned all over, then remove to a plate.

    Turn the heat down to medium and add the chopped onions to the casserole dish.

    Cook the onions for 6 to 8 minutes until soft, sweet, and lightly golden.

    Return the browned meat and any resting juices back into the dish.

    Stir in the carrots, swede, first half of the potatoes, bay leaves, Worcestershire sauce, salt, and black pepper.

    Pour over the hot beef stock and scrape up any caramelised bits from the base of the dish.

    Bring the liquid to a gentle boil, then cover tightly with the lid.

    Reduce the heat to low and simmer gently for 1 hour, stirring occasionally.

    Add the remaining potatoes, replace the lid, and simmer for another 45 minutes until the meat and vegetables are tender.

    Press a few of the softest potato chunks against the side of the pot to thicken the gravy.
