Instructions

Heat 1 tbsp of beef dripping in a frying pan over medium heat.

Fry half the diced onions for 6 minutes until soft and translucent, then leave to cool.

Preheat the oven to 180°C (160°C fan).

Mix the minced liver, pork belly, heart, cooled onions, breadcrumbs, sage, mace, salt, and pepper in a bowl.

Shape the mixture into 8 equal round meatballs.

Cut the soaked caul fat into squares and wrap each meatball tightly, tucking the edges underneath.

Place the wrapped faggots seam-side down in a baking dish and bake for 35 minutes until browned.

Meanwhile, fry the remaining onions in 1 tbsp dripping over low heat until deeply caramelised.

Stir in the plain flour and cook for 1 minute to form a smooth paste.

Gradually whisk in the beef stock and simmer for 10 minutes until thickened into gravy.

Pour the onion gravy over the baked faggots and return to the oven for 10 minutes.

Soak the caul fat in tepid water for 15 minutes before handling to make it pliable. If mincing your own offal, chill the meat thoroughly beforehand for a cleaner cut.
