Chef's tips
If bakeapples are scarce, stretch the filling with a portion of partridgeberries or apple without losing the bakeapple flavour on top.
Ingredient substitutions
- bakeapples → cloudberries, or a mix with apple to stretch a small picking
Storage
Keeps 2 days covered at room temperature or 4 days refrigerated.
Reheating
Warm in a 160°C oven for 10 minutes to re-crisp the topping.
Common mistakes to avoid
- •Using unripe, still-red bakeapples, which are very tart and firm
- •Underbaking so the topping stays pale and soft
