Simmer the dates, water and sugar in a saucepan for about 10 minutes, mashing occasionally, until thick and jam-like; cool slightly.

Preheat the oven to 180°C and grease a square baking pan.

Combine oats, flour, brown sugar and baking soda, then stir in the melted butter until crumbly.

Press half of the oat mixture firmly into the bottom of the pan.

Spread the date filling evenly over the base.

Scatter the remaining oat mixture over the top and press down lightly.

Bake for 30-35 minutes until golden, then cool completely in the pan before cutting into squares.

Let the squares cool fully, ideally a few hours, before cutting or the date layer will smear rather than slice cleanly.
