Toss the chopped green tomatoes and onions with pickling salt and let stand 4-6 hours or overnight; drain and rinse well.

Prepare 6 half-pint jars, lids and a water-bath canner; keep jars hot until filling.

Combine the vegetables, vinegar, brown sugar and spices in a large preserving pot and bring to a boil.

Simmer uncovered for 30-40 minutes, stirring occasionally, until thickened and no longer watery.

Ladle hot chow chow into hot jars, leaving 1 cm headspace, and remove air bubbles.

Wipe rims, apply lids and rings fingertip-tight, and process in a boiling-water bath for 15 minutes (adjust for altitude).

Cool jars undisturbed for 24 hours and confirm the lids have sealed before storing.
