Instructions

Preheat your oven to 180°C (160°C fan).

Line a 20cm square baking tin with greaseproof paper.

Sift the plain flour, salt, and mixed spice into a large mixing bowl.

Rub the chilled lard and butter into the flour using your fingertips until it resembles fine breadcrumbs.

Stir in the caster sugar and currants until evenly combined.

Add the egg yolk and milk, then stir with a round-bladed knife to form a firm dough.

Press the dough firmly and evenly into the lined tin using the back of a metal spoon.

Prick the surface all over with a fork in straight rows.

Bake for 25 to 30 minutes until lightly golden at the edges.

Sprinkle with the extra caster sugar immediately upon removal from the oven.

Cut into 16 squares while still warm in the tin using a sharp knife.
