Make the pastry by rubbing the butter into the flour and salt, then adding cold water to form a firm dough; chill 20 minutes.

Mix the brown sugar and cinnamon and pack it into the cored centre of each apple.

Roll the pastry and cut into squares large enough to wrap each apple completely.

Wrap each apple in pastry, sealing the seams, and place in a buttered baking dish.

Bring the water and granulated sugar to a simmer to make a light syrup and pour around the dumplings.

Bake at 190C (375F) for 40-45 minutes, basting once with the syrup, until the pastry is golden and apples are tender.

Serve warm, spooning the baked syrup over each dumpling.
