Instructions

Whisk together the flour, baking soda, ginger, cinnamon, cloves and salt.

Cream the butter and brown sugar until light, then beat in the molasses and egg.

Stir the dry ingredients into the wet mixture to form a soft dough.

Chill the dough for at least 30 minutes.

Roll into balls, coat in granulated sugar, and place on a baking sheet with space to spread.

Bake at 180C (350F) for 10-12 minutes until the tops crackle but the centres are still soft.

Cool on the sheet for a few minutes before moving to a rack.

Underbake slightly rather than overbake โ the cookies firm up as they cool and stay chewier that way.
