Instructions

Toss the chopped apples with the sugar and leave 15 minutes to draw out juice.

Beat in the eggs and oil.

Fold in the flour, baking soda, cinnamon, a pinch of salt and the walnuts.

Spread in a lined tin and sprinkle with cinnamon sugar.

Bake at 175C for 45-50 minutes until a skewer comes out clean.

Cool in the tin before cutting into squares.

The batter looks far too dry until the apples release their juice โ resist adding liquid.
