Instructions

Rub the cold butter into the flour and icing sugar and press into a lined tin.

Bake at 180C for 15 minutes until pale gold.

Whisk the brown sugar, eggs, syrup and vanilla without adding air.

Scatter raisins over the hot base and pour the filling over.

Bake 22-25 minutes until set at the edges and barely wobbling in the middle.

Cool completely before cutting into squares.
