Simmer the stripped cobs in 800 ml water for 20 minutes to make a sweet stock, then discard them.

Fry the bacon until crisp and soften the onion in the fat.

Add the potatoes and the corn stock and simmer until tender.

Add the kernels and cook 4 minutes.

Blend a ladleful and stir it back in to thicken, then add the milk and butter and heat through without boiling.

Season and finish with chives.
