Instructions

Layer the tomatoes, onions and peppers with the salt and leave overnight.

Drain thoroughly and rinse once.

Bring the vinegar, sugar and spice bag to the boil in a preserving pan.

Add the vegetables and simmer 1 hour 15 minutes until thick and glossy.
