Instructions

Boil the beets whole and unpeeled until tender, then cool and slip off the skins.

Slice them into rounds.

Boil the vinegar, water, sugar, salt and spice bag for 5 minutes.

Pack the beets into hot sterilised jars.

Pour over the boiling brine to cover completely and seal.

Leave one week before opening.

Wear gloves when peeling unless you want stained hands for a day.
