Instructions

Cream butter and brown sugar until fluffy, then beat in the molasses and egg.

Whisk flour, baking soda, ginger, cinnamon, cloves and salt together, then stir into the wet mixture.

Chill the dough for 30 minutes.

Roll into balls and coat each in granulated sugar.

Place on a baking sheet with space to spread.

Bake at 180ยฐC for 10-12 minutes until the tops crackle but the centres stay soft.
