Instructions

    Boil the macaroni until just past al dente, then rinse under cold water and drain very well.

    Whisk the mayonnaise with the vinegar, sugar, salt and pepper.

    Fold the pasta through the dressing.

    Stir in the celery, pepper and spring onion.

    Chill at least 2 hours.

    Loosen with a spoonful of mayonnaise before serving; it stiffens in the fridge.
