Simmer the dates with the water for 10 minutes to a thick paste, stir in the lemon and cool.

Rub the butter into the oats, flour, brown sugar and soda.

Press half the crumble firmly into a lined tin.

Spread the date filling over, then scatter the rest of the crumble and press gently.

Bake at 180C for 33-35 minutes until golden.

Cool completely in the tin before cutting.
