Instructions

Melt the butter in a large saucepan over a gentle heat on the hob.

Add the sliced onions and cook slowly for 20 minutes until soft and golden.

Stir in the crushed garlic and fresh thyme, cooking for 1 minute until fragrant.

Add the diced potatoes, hot vegetable stock, and bay leaf to the pan.

Bring the liquid to the boil, then reduce the heat to a gentle simmer.

Cover and simmer for 20 minutes until the potato chunks are tender.

Fish out the bay leaf and discard it carefully.

Blend the soup with a stick blender until completely smooth and velvety.

Lower the heat and stir in the crumbled Blue Stilton until fully melted.

Chef's tips
Cook the onions very slowly without scorching to coax out their sweetness, which cuts through the pungent cheese. Avoid boiling the soup once the Stilton is added, as excessive heat can cause blue cheese to split and turn oily.
