Grease and line a 20cm round cake tin with greaseproof paper.

Warm the whole milk in a small pan until lukewarm to touch.

Sift the flour, mixed spice, nutmeg, and salt into a large mixing bowl.

Rub the softened butter into the flour using your fingertips until it resembles fine breadcrumbs.

Stir in the dried yeast, caster sugar, currants, sultanas, and mixed candied peel.

Pour in the beaten egg and warm milk, mixing to form a soft, pliable dough.

Press the dough evenly into the prepared cake tin using the back of a spoon.

Cover the tin loosely with a damp tea towel and leave in a warm place for 1 hour until puffy.

Preheat your fan oven to 160°C (180°C conventional).
