Place the kippers into a heatproof dish and pour boiling water over to submerge them completely.

Cover the dish with a plate and leave the fish to steep for eight minutes until tender.

Lift out the kippers and pat them thoroughly dry using kitchen paper.

Peel away the skin and carefully remove all visible bones from the fillets.

Flake the warm kipper flesh directly into a food processor bowl.

Add the softened butter, cream cheese, lemon juice, lemon zest, ground mace, and cayenne pepper.

Pulse until well combined and smooth, taking care not to over-blend into a liquid paste.

Stir through the chopped parsley and black pepper with a spoon.

Spoon the pâté into four small ramekins and smooth the tops with a spatula.
