Simmer the dates with the water for 10 minutes, mashing until you have a thick spreadable paste. Stir in the lemon juice and cool.

Rub the butter into the oats, flour, brown sugar, soda and salt until crumbly.

Press half the crumble firmly into a lined pan.

Spread the date filling to the edges, then scatter the rest of the crumble over and press lightly.

Bake at 180C for 35-40 minutes until the top is golden.

Cool completely in the pan before cutting into squares.
