Take the steaks out of the fridge 40 minutes ahead and salt them on both sides.

Cook the onions in half the butter over low heat for 20 minutes until soft and browned. Set aside.

Get the pan smoking with the oil, then lay the steaks in and leave them for 3 minutes without moving them.

Turn, add the rest of the butter and baste for 3 minutes for medium rare.

Rest the steaks 8 minutes on a warm plate โ this is not optional.

Reheat the onions in the pan juices and pile them over the steaks with a heavy grind of pepper.

Dry the steak surface with paper towel just before it hits the pan; wet meat greys instead of browning.
