Instructions

Soak the dried meat in warm water for 20 minutes to soften slightly. Drain well.

Put the meat into a heavy pot with fresh water, ginger and garlic.

Bring to a boil. Lower the heat, cover, and simmer for 30 minutes until the meat begins to soften.

Add the pumpkin cubes and dried red chillies.

Simmer for another 10 minutes until the pumpkin is tender.

Add the green beans and cook for 5 minutes.

Stir in the chopped mustard greens. Cook for 3 minutes until wilted.

Season with salt. Simmer for a final 2 minutes before serving hot.
