Instructions

    Mix chicken pieces with turmeric, half the chilli powder, half the ginger-garlic paste and salt. Leave for at least 30 minutes.

    Heat sesame oil in an iron kadai (deep curved pan). Add sliced onions and fry until golden brown.

    Add the remaining ginger-garlic paste and slit green chillies. Cook until the raw smell goes away.

    Add coriander powder and the remaining chilli powder. Fry briefly until fragrant.

    Add the marinated chicken pieces. Mix well to coat them completely in the masala (spice mix).

    Cover and cook on medium heat for about 15 minutes, stirring occasionally, until the chicken releases its juices.

    Uncover and cook on medium-high heat. Keep stirring until all liquid dries up and the chicken fries in the oil.

    Add curry leaves and keep stirring. Cook until the chicken turns deep reddish-brown and crisp at the edges.

    Sprinkle over crushed roasted peanuts if using and toss well.

    Squeeze fresh lemon juice over the top before serving hot.

Chef's tips

Use bone-in chicken for the best flavour, as boneless meat can dry out quickly. Adjust the amount of chilli powder to taste, as Guntur chillies vary in heat.
