Instructions

    Preheat your oven to 180C (160C fan-forced) and line a 21 x 11 cm loaf tin with baking paper.

    Scatter the chopped macadamias onto a baking tray and roast for 6 minutes until lightly golden and fragrant.

    Whisk the mashed bananas, melted butter, brown sugar, eggs, and vanilla extract together in a large bowl until smooth.

    Sift the plain flour, baking powder, bicarbonate of soda, cinnamon, and salt directly into the wet banana mixture.

    Gently fold the dry ingredients with a spatula until just combined, being careful not to overwork the batter.

    Fold three-quarters of the toasted macadamias into the batter until evenly distributed.

    Pour the mixture into the prepared tin and smooth the top with the back of a spoon.

    Scatter the remaining toasted macadamias over the top of the batter.

    Bake for 50 to 55 minutes until a skewer inserted into the centre comes out clean.
