Grease and line a 20 x 30 cm slice tin with baking paper.

Preheat your oven to 180C (160C fan-forced).

Simmer sliced apples, 50 g caster sugar, lemon juice, and cinnamon in a saucepan over medium heat for 8 minutes.

Remove the apple filling from the heat and allow it to cool completely.

Rub chilled butter into the flour, baking powder, salt, and remaining sugar until it resembles fine breadcrumbs.

Add the beaten egg and vanilla extract, mixing lightly to form a soft dough.

Press two-thirds of the dough evenly across the base of the prepared tin.

Spread the cooled apple mixture evenly over the pastry base.
