Place two small ceramic saucers into the freezer to chill for testing the jam setting point later.

Place the chopped pineapple, grated apple, and water into a large heavy-based saucepan over medium heat.

Bring the fruit mixture to a simmer and cook for 12 minutes until softened.

Add the white sugar, lemon juice, lime juice, lemon zest, grated ginger, and salt to the pan.

Stir constantly over low heat until all sugar crystals have completely dissolved.

Increase the heat to medium-high and bring the mixture to a rapid, rolling boil.

Boil vigorously for 15 to 20 minutes, stirring occasionally to prevent the fruit from catching.

Spoon a little hot jam onto a frozen saucer and wait one minute.

Push the edge of the jam gently with your finger; if the surface wrinkles, setting point is reached.

Remove the pan from the heat and let it rest for 5 minutes to settle the fruit evenly.

Ladle the hot jam carefully into warm sterilised jars, leaving a 1 cm gap at the top, and seal.

Leave the jars undisturbed on a wooden board until completely cold.
Chef's tips
Pineapples are naturally low in pectin, so the grated green apple is essential for achieving a reliable set without commercial gelatine. If you prefer a smoother jam, pulse half of the cooked pineapple with a stick blender before adding the sugar. Always use a wide, heavy-bottomed pan to allow steam to evaporate quickly during the rolling boil.

Storage
