Instructions
- 1
Put the grated ginger, sugar, and 1 cup water into a small saucepan.
- 2
Simmer for 5 minutes. Pour the liquid through a strainer to remove the ginger pieces and keep the syrup.
- 3
Stir the lemon juice and remaining water into the ginger syrup.
- 4
Chill the mixture in the refrigerator until it is cold.
- 5
Serve over ice. Garnish with a lemon slice if you like.
Chef's tips
Simmer grated ginger with sugar and water to make a quick syrup. This mixes much more smoothly than using raw ginger.
Storage
Refrigerate in a sealed pitcher up to 4 days.
Reheating
Not applicable, served cold.
Common mistakes to avoid
- โขPutting raw grated ginger straight into cold water, which leaves a gritty texture
- โขAdding too much sugar, which hides the fresh lemon and ginger flavors
